Las margaritas fajitas

This is my number one seller in my restaurant and Im going to share my secret.
Fajita - Spanish pronunciation: [ fahitas]) is a term found in traditional Mexican cuisine referring to any grilled or fried meat served on a flour or corn tortilla. The term originally referred to the cut of beef used in the dish which is known as skirt steak. Popular meats today also include chicken, pork, shrimp, and all cuts of beef. In my restaurant, the meat is often cooked with onions, mushrooms and capsicum, sour cream, guacamole and my salsa chipotle. We create our All in One Fajitas, more convenient. Rather than frying off the ingredients separately, you cook the chicken first for 3 minutes and then add the vegetables.
450g boneless chicken, cut into thin strips
2 tbsp Canola oil
1/2 onion sliced
1/2 green capsicum and 1/2 red capsicum sliced
6 medium mushrooms (optional)
My Chipotle salsa to taste if you want it Hot like a Mexican add more salsa
8 Soft Flour or corn Tortillas is gluten free (two very different flavours)
To Serve :
* My Salsa Chipotle
* Soured Cream Topping
Heat a heavy based frying pan until hot add oil and then the chicken. Fry for about 3 minutes until before gets brown. Add onion and peppers and cook for a further 2 minutes or until the meat is cooked. Add Mushrooms and heat them up.
Add (remember if you like it hot like a Mexican) Chipotle salsa
Serve with warm Tortillas, Salsa, Soured Cream and Guacamole.
