Kumara Leek and Smoked Cheese Scones

Ingredients
3 cups self-raising flour
1 tsp salt
60g butter
3/4 cup grated smoked cheese
1 cup diced leek
3/4 cup kumara, mashed
1 1/4 cups milk
1 tsp grated fresh ginger

Method
Preheat oven to 220C.
Line a baking tray with paper.
In a large bowl, sift the flour and salt.
Rub in butter to resemble bread crumbs.
Stir in the cheese, and leek.
In a separate bowl, mix the mashed kumara, milk and ginger, then add to dry ingredients.
Turn out dough onto floured surface and make into a square approximately 3cm think.
Cut to desired size and place on baking tray.
Bake for 15-20 minutes or until golden brown.
