Serves 4
 
16 lamb cutlets
6 slices GF bacon, chopped
1/2 cup GF BBQ sauce

In a large frying pan, cook the cutlets over high heat, 2 to 3 minutes each side or until done to your liking. Place on a paper-lined baking tray and let rest. Meanwhile, preheat the grill. To the same pan, add the chopped bacon and sautéuntil just cooked. Add the BBQ sauce and stir. Season to taste. Top each cutlet with the sticky bacon mixture and grill for 1 to 2 minutes or until nice and crispy.
