Jeremy Dixon's Healthy Zucchini Fritters

MAKES 20 SMALL OR 10 LARGE FRITTERS

1 medium onion finely diced
3 zucchini (courgette)
1 cup chickpea (besan) flour
optional - 1/2 cup water
1 teaspoon salt
1 tablespoon sweet chilli sauce
1 tablespoon black sesame seeds
1 teaspoon mild curry powder
Bunch coriander
Rice bran oil for frying


Saute the onion in a little oil until clear.
Grate the zucchini with a hand grater using the largest holes.
Mix all the ingredients together in a mixing bowl. The moisture from the zucchini should make everything the right consistency however you may need to add up to half a cup of water.
Optional: Let the mixture sit for around 20 minutes in the fridge, then stir again. If you are in a rush this is not absolutely necessary but you will end up with a more consistent mix that will stick together better.
Fry with a little oil in a hot pan (ideally non-stick) for around 4-5 minutes each side or until golden brown and cooked right through.
Serve immediately with sweet chilli sauce, salsa or chutney on the side.
