400 ml golden syrup
100g butter, extra to butter your dish
100g caster sugar
lemon zest from 1/2 a lemon
2 eggs
1 tsp vanilla essence
100g self-raising flour, sifted

Preheat the oven to 180c and grease a deep baking dish or 1.5 ltr pudding dish. Pour your golden syrup into the bottom. 

In a food processor or using a hand whizz, cream together the butter, sugar and zest until pale, light and fluffy. Beat in the eggs one at a time, add the vanilla and flour and beat until combined. Pour into your dish over the treacle.

Bake in the oven for 30 minutes, until puffy and golden. The treacle is roasting hot so careful not to burn your lips.

Serve with thick custard or vanilla ice cream.
