Jax Hamilton's Black Bean Chocolate Cake with Bashed Strawberry Sauce

Cook Time: 35-40 min

Serves: 8

1 tin black beans, rinsed and drained

3 eggs

100g caster sugar

¼ cup cocoa powder

1 tsp coffee

1 tsp vanilla essence or ½ vanilla pod, scraped

1 tsp baking powder

1 orange, zest and juice

pinch salt

50g dark chocolate, grated

 

Preheat oven to 180, grease and line a cake tin 

Other than the chocolate, place all ingredients in a blender and pulse until smooth and lump free, then gently stir through the grated chocolate. 

Pour the silky, dark batter into your lined cake tin. (lick the spoon clean!). 

Bake for 35 minutes, remove from the oven and allow to cool. 

Serve with yogurt or whipped cream and a large spoonful of bashed strawberry sauce.

 

Bashed Strawberry Sauce

 

Prep Time: 5 min

Cook Time: 10 min

Serves: 6 

1 pottle strawberries, hulled and chopped

¼ cup caster sugar

2 tbsp water

½ tsp white balsamic vinegar

2 tbsp water

1 tsp cornflour

 

Combine strawberries, sugar and first measure of water with balsamic vinegar in a pan. 

 

Bring to a boil, reduce to a simmer, cook for 5 minutes, then gently mash the fruit with the back of a spoon or a potato masher.  Stir well.

 

Whisk together the 2nd measure of water with cornflour, bring the strawberry mixture to a boil then gradually add the cornflour mixture.

 

Stir until it thickens, remove from heat, allow to cool then serve with wedges of black bean cake and a dollop of something creamy.
