Japanese Potato Salad

Serves: 4

Ingredients
3 Potatoes, peeled and cut into block
1/4 Brown Onion, sliced and soaked in water
1/8 Cucumber, sliced and salted
Corn (optional)
Salt & Pepper
3 Tbsp Japanese QP Mayonnaise
1 Tbsp Japanese Mustard

Method
Boil potatoes in a medium pot until they're soft. Once they are cooked, drain the water, mash the potato and set aside to cool.
Slice the onion and soak in water for a few minutes. Drain the water and set aside.
Slice cucumber, sprinkle with salt and set aside for 5 minutes. Squeeze out excess water and set aside.
In a large bowl, mix mashed potato, sliced onion, cucumber, corn, salt and pepper, mayonnaise and Japanese mustard.
Serve in a bowl
