Indian-Spiced Lentil Soup

Cost: $4.05
Serves: 4

Ingredients
2 tbsp oil 1 onion, chopped
1 stalk celery, chopped 1 small potato, diced
1 garlic clove 1 can tomatoes
1/2 tsp ground cumin 
1/2 tsp ground coriander
1/4 tsp cayenne
1 1/2 C dried lentils, rinsed
1 cup vegetable stock or water
Salt and pepper to taste

Method
Heat the oil in a large pot over medium heat.
Add the onion, celery, potato and garlic.
Cook vegetables until softened, about 10 minutes.
Add the tomatoes.
Stir in the spices.
Add the lentils and stock and bring to the boil.
Reduce the heat to low, cover and simmer, simmering occasionally until the lentils are tender.
Season with salt and pepper and cook for another 10 minutes.
Serve hot.
