Homemade Peanut Butter Chocolate Cups

Makes around 36

These are one of my most favourite treats to make for Christmas... and they make for great gifts!

Ingredients
1 cup creamy or nutty peanut butter
1/4 cup butter
1/4 cup brown sugar
1 1/4 cups icing sugar
4 cups milk chocolate chips or 2 blocks milk chocolate
1/4 cup vegetable shortening
+ double boiler to melt chocolate
+ mini muffin tray along with mini paper cases
Baking tray lined with baking paper

Method
Line mini muffin tray with paper cases.
In a medium sauce pan combine the peanut butter, butter and brown sugar and stir over a medium heat until it starts to bubble.
Remove from heat and add icing sugar a ¼ at a time until all is well combined.
Set aside.
In the double boiler, melt together, chocolate and shortening until completely melted.
Drop about a tsp of chocolate into the bottom of each paper case, then use a paint brush to bring some of the chocolate up the sides of each case.  Once completed, place in fridge for 30 minutes or until firmly set.
Take the peanut butter mix and roll into small balls then flatten slightly.
Place in fridge for 30 minutes.
Place a peanut butter ball on top of each chocolate lined paper case.
Cover with melted chocolate.
Set in fridge for another 30 minutes, then they are ready to go.
They can be made now and frozen until required.
