She was a real whiz at making the most amazing shortbread, it was good enough to steal, which my brothers and I often did from her cookie jar! This is her recipe - but to honest I am not quite sure if I can make it quite as good as hers, but I am going to keep on trying!

Ingredients

250g butter unsalted
120g icing sugar
250g flour
120g cornflour

Method

1. Preheat oven to 150C.
2. Cream the butter and icing sugar until very smooth and pale in a food processor or with an electric beater.
3. Add sifted flours and mix to form a smooth dough.
4. Roll out into a log, or form a square shaped log then cut off 1cm slices.
5. Place on a greased baking sheet then spike two times with a fork.
6. Cook for 25 minutes.
