Ganesh Raj's Soba Noodles with Mushroom, Chicken, Bok Choy and Miso Broth

SOBA NOODLES WITH MUSHROOM, CHICKEN, BOK CHOY AND MISO BROTH.

Ingredients (Feeds 4) 

2 tbl spoons canola oil

1 packet dried soba noodles

2 cups shitake mushrooms

6 stalks of Spring onions. Separate the green and white bits

5 ounces shitake mushrooms stemmed and thinly sliced (about 3 cups)

4 chicken thighs with bone on.

4 cups water

1/2 cup white miso paste

2 thumbs of ginger grated 

8 cloves of garlic thinly sliced

2 tablespoons  soy sauce

1 pack of Bak Coy

 

Instructions

 

Cook Soba noodles for 4 mins. Drain and set aside.

 

In a large pot, add oil and fry off the white of the spring onions and garlic.

 

Add the water and bring to a boil.

 

Add the chicken and cook until cooked through, about 15 to 20 minutes.  Remove and cool.

 

Add miso, ginger, shitake mushrooms and soy sauce and set to a low simmer. Whisk slowly. Do not let it boil or the miso will separate.

 

Pull chicken meat off bone and put it into the broth.

 

Add the bok chow and cook for 1 min.

 

Divide the soba into bowl and ladle in the soup. Garnish with the greens of the spring onion.
