Ganesh Raj's Beef Stir Fry with Cauliflower Rice
BEEF STIR FRY WITH CAULIFLOWER RICE
1/4 cup vegetable oil
500 g beef rump steak thinly sliced
2 cloves garlic thinly sliced
1 tbsp grated ginger
1/3 cup Chinese cooking wine
2 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp white sugar
1 onion halved thinly sliced
4 spring onions cut into 5cm lengths
Heat oil in a large frying pan or wok on high.
Stir fry beef and onion for 1-2mins until brown.
Remove beef and onion from pan
In the same pan, add spring onion, garlic and ginger and cook 1 min until it smells good.
Return beef to pan. Combine remaining ingredients and add to beef and stir fry until sauce has thickened slightly.
Cauliflower Rice Recipe:
Serves: 4 Prep time: 10 min Cook time: 6 min
1 head cauliflower
1 tablespoon extra-virgin oil
1 medium onion, diced
Salt and coarsely-ground pepper to taste
Preparation: Wash and remove leaves. Remove black spots. Chop coarsely. Heat oil to medium and saute for 10mins till soft. Place pieces in food processor and pulse till evenly chopped. Watch out to not make it too fine. Place cauliflower back into pan at medium and cook for 5mins till the cauliflower is slightly crispy. Season with salt and pepper and serve.
