Funny Apple Cake

Serves 8

This cake improves with age and is almost better the second day, perfect when you need to get pudding ready in advance.

6 large apples peeled, cored and sliced
3 Tablespoons coconut sugar
1 Tablespoon ground cinnamon
150 grams cold butter, cubed
1/2 cup sugar
2 cups of wholemeal spelt flour, sifted
1 teaspoon baking powder
1 egg, beaten
1 cup apricot jam thinned with the juice of lemon
grated rind of 1 lemon

Preheat the oven to 160C or 140C if fanbake.
Line a 20 cm spring-form cake tin.
Put apples in a saucepan with a little water and cover with a lid, simmer for 10 minutes or until tender. 
Stir through the coconut sugar and cinnamon and set aside to cool while making the base.
Rub the butter, sugar, flour and baking powder together (use your fingertips and work quickly or pulse in a food processor). 
Stir in egg and lemon rind and press into prepared cake tin.
Spoon over the apple mixture.
Bake for 40 minutes, pour over apricot jam before returning to the oven for a further 10 minutes.
Serve warm with whipped cream or thick natural yoghurt
