Fresh Salad Lettuce Cups by Brett McGregor
Smoked fish or shredded chicken salad in lettuce cups
Makes 2 cups
½ red onion, finely chopped
500g smoked fish or shredded chicken, deboned and flaked
1/3 cup mayo
¼ cup sour cream
1 tbsp dill, chopped
squeeze of lemon juice
1 hard boiled egg, finely diced
1 celery stick, finely chopped
10 small lettuce cups
small bunch of chives
Place the onions in a bowl and let them soak for about 15 minutes to mellow. Strain and set aside.
Place the fish or chicken into a bowl and top with the onions. Add mayo, sour cream, dill, lemon juice, egg and celery. Gently combine and season to taste.
Place a small scoop into a small lettuce cup and serve sprinkled with chives
