1/4 tsp cinnamon
1/4 tsp 5 spice
1/4 cup apple juice
1/4 cup water
as needed egg wash
as needed sugar

Method
Put the AP flour, 3 Tbsp sugar and salt in the food processor and pulse a few times to combine.
Add chilled butter and pulse until the butter is pea sized, combine apple juice and water in a spray bottle.
Spritz the flour butter mixture with the apple juice water, pulse again, add more apple juice water as needed until the dough sticks together.
The idea is to add as little liquid as possible when it comes together form into a ball.
