Free Form Apple Pie
This is a variation on the classic American apple pie, it's great because you don't need a pied pan and its scented with a little Chinese five spice.
Ingredients
3 cup AP flour
3 Tbsp sugar
1 tsp salt
227g butter (well chilled)
340g apples
3 Tbsp cider vinegar
1/4 cup sugar
pinch of nutmeg
1/4 tsp cinnamon
1/4 tsp 5 spice
1/4 cup apple juice
1/4 cup water
as needed egg wash
as needed sugar
Method
Put the AP flour, 3 Tbsp sugar and salt in the food
processor and pulse a few times to combine.
Add chilled butter and pulse until the butter is pea sized, combine
apple juice and water in a spray bottle.
Spritz the flour butter mixture with the apple juice water, pulse
again, add more apple juice water as needed until the dough sticks
together.
The idea is to add as little liquid as possible when it comes
together form into a ball.
Wrap in plastic wrap and leave to rest in for 20-30min.
In the meantime cook the apples in a pan over medium heat for 2-3
min.
Add vinegar, sugar, nutmeg, cinnamon, and 5 spice cook until
everything is reduced and sticky.
Add 2 Tbsp butter and remove from the heat to cool.
To make the pie roll the dough out into a large circle, place on a
greased sheet pan and place the filling in the middle.
Carefully pull the dough up around the filling leaving a opening in
the middle.
Brush with egg wash and sprinkle with sugar, bake in a preheated
oven at 190 degrees for 30-35min. or until golden brown.
Serve with vanilla ice cream.
