Flash-Roasted Pesto Salmon

Eating oily fish is one of the best ways to get your omega-3s, which keep those synapses (and everything else) well oiled. This speedy salmon is the ultimate dinner-party dish - it takes just 6-8 minutes in a hot oven to cook through. The same treatment also works well for any kind of white fish fillets.

Cook time 6-8 mins
Serves 6

Ingredients
6 x 200g pieces boneless, skinless salmon fillet, cut from the thick end
6 tbsp good-quality pesto
3 tbsp capers
18 cherry tomatoes
finely grated zest of 1 lemon
2 tbsp olive oil
salt and ground black pepper

Method
Preheat oven to 220C and line a large, shallow baking dish with baking paper for easy clean-up.
Arrange salmon pieces in a single layer in the prepared baking dish.
Spread about 1 tbsp pesto over each piece.
Scatter the capers, tomatoes and lemon zest over the salmon, drizzle with olive oil and season with salt and pepper.
Roast until just cooked through (6-8 minutes) and serve immediately.
