Fajita-Ranch Chicken Wrap

Serves 4
$2.20 pp

Couple boneless chicken breasts cut into thin strips for stir frying
1/2 tsp chilli powder or to taste
1/2 tsp garlic powder or to taste
Salt and black pepper to season
Oil for stir frying
1 yellow and red pepper - finely cut into strips
Couple of tbsp or more of ranch salad dressing
Packet plain flour tortillas - warmed
Grated cheddar cheese or for fat reduced use Edam

Tomato Salsa
2 finely chopped tomatoes
1 small red onion finely chopped
1 green pepper - finely chopped
Couple tbsp finely chopped coriander
Couple clove finely chopped garlic
Salt and black pepper to season
Few drops of hot chilli sauce

In a bowl combine above salsa ingredients, cover and allow to rest at room temperature.
Into a large bowl, combine chilli powder and garlic powder then toss chicken strips.
Heat oil in a pan, then stir fry chicken with sliced pepper until cooked.
Toss in salad dressing.
Divide chicken and pepper mixture between warmed tortillas.  Top with salsa and cheese.
Roll up, cut in half and enjoy.

NOTE - to warm tortillas, simply place in foil, and bake in oven for 10 minutes.
