Domenica's Passionfruit Savarins

Ingredients
1/2 cup canola oil
3/4 cups caster sugar
1 eggs
1/2 cup passionfruit yoghurt
Juice and finely grated zest of 1 lemon
1 cups self-raising flour, sifted
1/2 cup sweetened passionfruit pulp

Method
Preheat oven to 160C, grease and flour a 12 savarin mould or a 12 hole small muffin tin.
Whisk oil and sugar together, then add the egg until mixture is creamy, stir in yoghurt, lemon juice and zest.
Stir in flour until just mixed through, don't over-mix.
Spoon into prepared tins and bake for 15 -20 minutes, or until a skewer inserted comes out clean.
Cool on a cake rack and drench with passionfruit syrup or pulp.

Serve with mascarpone.
