Diane Davidson's Pronto Peppered Beef With Vegetables
Ingredients
2 tablespoons olive oil
600 grams beef - sliced into thin strips
1 red onion - chopped
2 cloves garlic - crushed
1 fresh chilli - de-seeded and finely chopped
3 capsicum peppers (red, yellow & green) - de- seeded and
sliced
1 can (400g) chopped tomatoes in juice
½ cup beef stock
100 grams green beans - trimmed and sliced
1 cup broccoli - broken into florets
Salt and freshly ground black pepper, to season
¼ cup parsley - finely chopped
Method
In a large pan, heat the oil and sauté the beef
strips, onion, garlic and chilli for several minutes.
Add capsicum peppers, tomatoes with juice and beef stock.
Bring to boil. Lower heat and leave to simmer for 5 minutes.
Place beans and broccoli on top of mixture and continue to cook
until beans are tender - but still bright green.
Taste-check and add salt and pepper as required. Pile into a large
serving bowl.
Serve this with Jasmine Rice, pasta or mashed potatoes, or with warm garlic bread to soak up the flavoursome juices.
NOTE: This hearty recipe is a great way to incorporate antioxidant-rich vegetables into a meal that looks and tastes great. It is quick and easy to cook and doesn't cost too much, either!
