Dad's Favourite Almond Cookies
Makes 30 biscuits
Preparation time 10 minutes
Cooking time: 10-12 minutes
These biscuits are wheat-free, if you want them to be gluten free make sure you buy a gluten free icing sugar. They are my version of the Allpress Café Ricciarelli recipe published in the Sunday Star Times by Julie Le Clerc.
Ingredients
2 1/4 cups ground almonds
2 cups icing sugar
2 tablespoons rice flour
1/4 teaspoon cream of tartar
1/8 teaspoon baking powder
2 free range egg whites
1 tablespoon honey
1/2 teaspoon vanilla extract
Method
Stir together the dry ingredients.
Whisk egg whites, honey and extract until just frothy.
Stir egg white mixture into dry ingredients, roll into loaf shapes
and wrap. Chill for up to an hour.
Preheat the oven to 170C.
Slice into rectangular biscuits and bake on lined trays for 10-12
minutes. Allow to cool a few minutes before transfer to a wire
rack.
Traditionally served dusted with a little icing sugar.
