2 eggs
3/4 C Milk
1/4 C Water
3 tablespoons melted butter
1 C Flour


Whisk the eggs.  Add the rest of the 'wet' ingredients and whisk.

Sift in the flour and mix until it's a smooth batter.

Chill for 30 mins - 1 hour so the bubbles have a chance to settle.

Cook in a medium - hot frying pan or skillet. It's really a matter of about 30 seconds each side. The thing with crepes is to make them as thin as possible.

Serve with lemon and sugar or maple syrup or - in this case - roll them and stuff with chocolate mousse, then dust with icing sugar.
