Chilli Con Carne
Serves 4

Ingredients
3 tbsp oil - divided measure
500g beef mince
1 onion - diced
1 star anise
4 cloves of garlic - sliced
2 green chillies - sliced
1 1/2 tsp ground cumin
1 tsp chilli powder
1 1/2 tsp smoked paprika
2 tbsp tomato puree'
350ml red wine
1 tsp Worcestershire sauce
500ml beef stock
400g kidney beans - drained and rinsed
Method
Brown the mince in batches over a high heat using half the
oil.
Once the meat is browned, remove from pan and set aside.
Add a little water and scrape any leftover bits and pieces from the
pan and place with the mince.
Lower the heat to medium and add the remaining oil to the same pan.
Then add the onions and star anise.
Cook until the onions are beginning to colour then add the garlic
and chilli.
Cook for a further 5 minutes but be careful not to burn the
garlic.
Now add the cumin, chilli powder and paprika, stir to
combine.
When the room becomes fragrant, add tomato puree and combine well
to coat everything.
Just as it is beginning to catch on the bottom of the pan throw in
the mince with all the juices and mix together.
When everything is evenly combined add the red wine and Worcester
sauce and let the liquid reduce by 1/2.
Add the tomatoes, stock and season with salt and pepper.
Cook for at least an hour or until it has reduced to a nice thick
sauce.
