Chickpea Salad in Potato Basket
Preparation time 10-15 min
Serves 3 - 4 people
Ingredients
3 cups of chick pea
1/2 cup chopped tomato
1/2 cup chopped cucumber
3 scallions
1 ea potato
2 tbl olive oil
1 tbl lemon juice
1/2 tsp cumin powder
1/2 tsp cayenne pepper
1/2 tsp dried mango powder
1 tbsp of cranberry
1 tbl toasted almond slivers
2 tbsp of chopped mint
Method
Pre heat oven to 200C
Combine 1 1/2 cup chickpea with olive oil and bake till golden
brown
Grate potato and pat it dry to remove extra moisture
Add salt and pepper
Heat the fryer
Place the grated potato in tea strainer and top it up with another
strainer
Hold it firmly and fry till golden brown
Tap it and un mould the basket.
Combine the other ingredient together with roasted chickpea
Fill the potato basket with chickpea salad.
Garnish with roasted almonds and cranberry.
