Cheese Biscuits

Snackettes to die for& well not really, but they are nice and easy to make, and can be made in advance and will be enjoyed by all&


2 cups plain flour
1 Tbsp or less of salt
1/2 tsp cayenne pepper
1/2 tsp baking powder
14 Tbsp VERY cold butter cut into chunks
1 good cup and a bit more of grated tasty cheese
1/2 cup grated parmesan cheese
1 large egg at room temp - lightly beaten
1/2 cup finely chopped walnuts
+ for glazing - 1 egg yolk
1/4 tsp salt


Preset oven to 200C.

Into a food processor add flour, salt cayenne pepper and baking powder and pulse until combined.  Add the butter and pulse again until the butter is in small pieces.  Then pulse until you achieve fine bread crumb mix.  Add cheese and pulse again, before adding egg to repulse until mix comes together.

Tip mix onto a floured surface and knead until you have a workable dough.  Shape dough into large rounds then wrap in glad wrap and place in fridge until VERY COLD.

Remove from fridge, roll to about 1/2 cm thickness, use a cookie cutter to cut into desired shapes.

Brush tops with glaze.

Bake until golden brown - will depend on your oven but about 12 - 15 minutes.
