Chana Dhal with Roti

*1 cup chana dhal (soak for 4 hrs in cold water)                                   .48c

Method

Put wholemeal flour and 1 tsp salt into a bowl, add ½ cup cold water and mix to form a smooth dough.  Knead dough for 5 minutes until it is smooth and elastic.  Place dough in a clean, oiled bowl.  Cover and stand in a warm place for at least 30 minutes. 

Chop half the onion, carrot and potato into 1cm cubes.  Place in saucepan with drained chana dhal, garam masala, crushed garlic, sugar, 1 tsp salt, 1 litre of water and bring to the boil.  Simmer for 45 minutes until carrots and chana dhal are very soft.  Add more water if necessary.

Slice onions very thinly and fry in vegetable oil until golden brown.

Divide dough into six balls.  Roll each one until Roti are side plate size.

Heat flat frying pan, add Roti one at a time to hot pan and brown on both sides. Keep warm till all are cooked.

 

Serve Chana Dhal in bowls, sprinkle the top with golden fried onions and serve with Rotis on the side.
