450grams chicken breasts
3 tbsp. oil
50grams roasted cashew nuts
1 tbsp. Shaoxing rice wine or sherry
1 Tbsp. light soy sauce
1 Tbsp. finely chopped spring onions (to garnish)
Cut the chicken into slices.
Heat a large frying pan until very hot and add the 2 tbsp oil, when very hot add chicken and stir fry for 3 min. Remove chicken from pan.
Wipe clean pan, heat again until very hot add 1 tbsp oil.
Add cashews and stir fry for 1 minute, then add rice wine and soy sauce.
Return chicken to the pan and stir fry the mixture for another 2 minutes.
Garnish with Spring onions and serve at once.
