Carrot Cake
Ingredients
300 mls oil
300g brown sugar
4 eggs
2 and 1/2 cups grated carrot
1/2 cup grated apple (skin on is fine)
100g (approx) dried cranberries
100g (approx) raisins or sultanas
1/2 cup of hand crushed walnuts
2 cups flour
2 teaspoons each baking soda AND baking powder
1 teaspoon each ground ginger, cinnamon and mixed spice
Method
Preheat the oven to about 150C
Line and grease a 24cm cake tin
Cream the oil and brown sugar
Add the eggs one a time and whish until thick
Add the carrots, apple, berries, sultanas and nuts
Stir in the dry ingredients
Bake for about an hour.
It makes a BIG cake. Great if you have a dozen people coming for afternoon tea.
