1 kg minced beef
1/2 tsp cajun spice
1/3 cup ketchup
3/4 cup of breadcrumbs
1 tsp salt and pepper
2 tsp Worcestershire sauce
1 chopped carrot
1/2 chopped onion
200g bacon, cooked and chopped
2 cups water
Cook the bacon until crispy.
Saute carrots and onion in the bacon fat until tender.
Remove to a large bowl.
Add all of the other ingredients and mix well.
Mold into a loaf shape in a roasting dish.
Pat down to remove all of the air.
Add 2 cups of water to the pan and cover with tin foil.
Bake at 250C for 55 - 65 minutes. Uncover for the last 10 minutes.
Let stand for 15 minutes before slicing.
When ready to use. Pat slices with cajun spice and blacken in a hot skillet or on the BBQ.
Serve with crusty bread or mushroom gravy.
