Brussel sprouts with bacon
With Simon Holst
My wife didn't think she liked brussel sprouts - until I made her these...
For 4 servings:
1 Tbsp olive oil
2-3 rashers bacon
500-700g brussel sprouts
1-2 cloves garlic, peeled and chopped
1/2 cup chicken stock
Heat the oil in a medium-large frypan.
While the oil heats, cut the bacon into 1cm strips then add it to the pan and cook, stirring frequently until it is golden brown. Lift the bacon from the pan (leaving the oil and drippings in the pan).
Halve small sprouts (or quarter larger ones), then add them to the pan with the chopped garlic and stir-fry for 1-2 minutes. Add the stock and cover with a lid and simmer for about 5 minutes or until the sprouts are just tender.
Remove the pan lid, then stir in the bacon and cook for 1-2 minutes longer until most of the liquid has evaporated.
Serve immediately or warm thoroughly when required.
