Ingredients

1/4 Cup Olive Oil
2 Tbsp Red Wine Vinegar
3 Cloves Garlic, mashed
1/2 tspn Thyme, dried
1 Pork Fillet, trimmed of sinew etc, sliced horizontally

Method:

Combine first 4 ingredients in a shallow dish and add the pork to marinate.

Heat a medium size fry pan on a medium heat, add a touch of oil. When hot add the pork and cook until nice and golden on both sides. 4-5 minutes per side depending on the thickness. Place the sliced pork onto a plate and top with the salad.

Salad

1 Bunch Watercress leaves picked from stalks
2 Large Tomatoes, deseeded, chopped
1/3 Cup Mint, sliced
1/3 Cup Basil, sliced

Method: Combine in a bowl and set aside. Pour over dressing just before service.

Dressing

1/4 Olive Oil
2 Tbsp Red wine vinegar
2 Garlic Cloves, minced
1/2 tspn Salt
Black Pepper to taste

Method: Whisk together, set aside.
