10g Parmesan cheese, grated, plus extra for garnish
20g mozzarella - optional
4 rashers streaky bacon or pancetta
3 tomatoes, diced
Cook bacon in a little oil until crisp. Set aside.
Whisk eggs together and throw them into a hot pan to create an omelette. Let cook for 2 minutes, then grate over the Parmesan and moz. Continue to cook for a further minute then place a wrap over the top. When the wrap holds the omelette flip it over to crisp the bottom.
Remove from heat and top with bacon, tomatoes and watercress. Finally grate over the remaining Parmesan and serve.
