Breakfast of Champions

Ingredients
4 poached eggs
1 cup panko bread crumbs
2 tbsp flour
2 eggs - whisked
8 bacon slices
4 tomatoes- halved
1 cup rocket- drizzled in oil
1 loaf ciabatta - grilled

Method
Cook bacon and tomatoes as usual.
Take poached egg and gently roll in flour, then dip in egg, finally into the panko.
Deep fry until golden, remove, rest and eat ASAP. It should still be runny in the centre.

To serve, place a slice of grilled ciabatta on the plate, top with bacon and tomatoes, finally the egg, sprinkle with parsley if you have it and serve.
