Braised Brisket Pancakes with Hoisin, Cucumber and Spring Onion

Ingredients
Beef Brisket
1kg beef brisket
500ml beef stock
2 Tbsp hoisin sauce
1 small knob of ginger
1 red chilli
1 bunch coriander stalks
2 star anise

Pancakes
12 pancakes (duck pancakes from Asian grocery stores)
2 Tbs hoisin sauce
2 spring onions sliced finely
2 Tbsp crispy shallots (found at Asian grocery stores)
1 cucumber sliced into thin batons

Method
Season brisket well with salt and then seal in a hot pan until nice and brown all over.
Place into a nice tight sized pot along with the other ingredients.
Place lid on top and put in oven 160C for about 2 to 2 1/2 hours or until nice and tender were the meat will just fall apart.

To Finish
Steam pancakes to soften up. Place on a big serving platter along with braised beef, spring onions, crispy shallot and hoisin and let everyone make up their own pancakes.
