Black Forest Roll

Black Forest Roll (Chocolate and Cherry Jam Roll)
Preparation time 20-25 min
Serves 4-6 people
3 egg white
3 egg yolks
5g coffee powder
1 tsp vanilla
1 cup heavy cream
3 tbsp sugar
1 tsp vanilla essence or rum
25g cherry jam
1/2 cup chopped cherry
1 cup shaved chocolate
Pre heat oven at 180C and line a baking paper on square baking tray.
Whisk egg white to stiff peaks
Melt the chocolate on a double boiler.
Whisk egg yolk and sugar to a ribbon stage, add vanilla and coffee powder.
Combine chocolate in egg yolk mix.
Gently fold in egg white (do not over mix)
Pour the mix in the tray and bake till the cake springs back for around 15 minutes.
Once the cake is baked, remove from the tray and put a wet cloth on it and roll it.
Gently remove the towel for the cake to cool.
While the cake is getting cooled whip heavy cream with sugar and vanilla.
Spread the cream and cherry jam and flakes of chocolate and roll it back.
Garnish with cocoa powder or icing sugar
