Black Boy Peach Semi Freddo with Eaton Mess

This is a great way of making a frozen dessert like ice cream without the expense of buying an ice cream machine.
Prep Time: 15 mins
Costs: $1 per serve
120 grams of Black Boy peach jam or your favourite jam
5 egg yolks and 1 whole egg
100 mls of sweet desert wine
300ml cream - whipped
Place all the eggs and the wine in a whisking bowl and whisk over a pot of simmering water and cook until light and fluffy, you should be able to peak the sabayon and the peaks will not drop.
Remove from the heat and fold in jam making sure it is well mixed in. Fold in the whipped cream until it is smooth.
Pour into glasses or moulds and freeze.
Remove the Semi Fredo at least 10 minutes before serving, garnish with crumbled meringues and some black boy peach segments.
