Biscuit a la Cuiller (Ladies Fingers)

Time approx. 15 min plus cooking

Ingredients
4 egg whites
100 g caster sugar
4 egg yolks
100g flour
100g icing sugar

Method
Whip the egg white, then put in the caster sugar.
Mix in the egg yolk carefully and slowly.
Carefully mix in the flour - do not over-mix!
Line a tray with baking paper.
Spoon mix onto tray in soup spoon sized servings.
Bake for 12 minutes at 200C.
When cooled, sprinkle with icing sugar.
Can be kept fresh in a biscuit tin for 2-3 weeks.
When they get dry you can keep them in some syrup or fruit juice, then they are even more enjoyable.
