'Ben the Bear' Rice Dish by Erin Simpson

Recipe ‘Ben the Bear’ Rice Dish (Erin Simpson)


  • 4 cups of rice
  • 1 packet of powdered sushi
  • 1x egg
  • 1x can of sliced mushrooms
  • 1x red pepper
  • 1x spring onion
  • 1x carrot
  • Liquorice
  • Parsley


  • Boil 3 cups of Rice until cooked.  Remove from heat and add one packet of powdered sushi mix
  • Allow rice and mix cool for 30 minutes
  • Also bring to the boil one egg, remove from heat and also allow to cool
  • While cooling is happening cook in a fry pan one can of mushrooms in sauce and sliced veggies of your choice.  Erin’s choice would be carrots, spring onions and red peppers.
  • Once the rice is cooled, roll with your hands the desired shapes needed for ‘Ben the Bear’ i.e head, legs, and arms and place them on a plate of your choice
  • Pour over your cooked veggies and finally add Bens features (ears, nose, eyes, and paws) by careful cutting shapes with the boiled egg, carrots and liquorice
