Beef and Noodles
Serves 4-6
Preparation time; 10 minutes
Cooking time 40 minutes
This recipe is particularly useful for freezing, reheat and serve with noodles, bean sprouts and handfuls of herbs for a simple supper.
Ingredients
500 grams rump steak, trimmed and sliced
1 onion, sliced
1 clove garlic, sliced
4-5 slices ginger
1/2 chilli, chopped
1 stalk celery, sliced
1/2 carrot, sliced
1 tablespoon oyster sauce
2 tablespoons hoisin sauce
1/2 cup beef stock
1/2 chilli, chopped (extra)
1 handful of mung beans
1/2 cup mixed mint and coriander leaves
1 packet of fresh Chinese noodles
Method
Heal a little oil in a deep-sided frying pan and stir fry
the beef until browned.
Remove with a slotted spoon.
Add onions, garlic, ginger, chili, celery and carrot and stir fry
until fragrant.
Return the meat to the pan, add the oyster and hoisin sauce along
with the stock.
Cover and bring to the boil, simmer for 25-30 minutes or until the
meat is tender.
Serve with fresh noodles and fresh chilli, mung bean sprouts and
herbs.
