Barbecue Garlic Prawns

There's something about prawns that makes them incredibly popular. This is a simple recipe, but serve them up and watch how quickly they disappear!

Ingredients
500g frozen whole cooked prawns, thawed
3-4 cloves garlic, chopped
1/4 cup dry white wine
1/4 cup olive oil
1/4 tsp salt
pepper to taste
2-3 Tbsp chopped parsley

Method
Place the thawed prawns in a shallow dish. Add the remaining ingredients and stir gently to combine, then marinate in the fridge for 1-2 hours. Preheat the barbecue grill and cook the prawns briefly for 2-3 minutes per side.

Serve with crusty bread and a crisp green salad on the side.

Alternatively:
Preheat the oven to 200�C.

Remove the heads and shells from the thawed prawns, leaving the tails attached (retain the heads and shells to make stock if desired).

Place the peeled prawns in a shallow 20cm square oven dish, and add the chopped garlic, oil and wine. Stir gently to combine, then sprinkle with the salt and a generous grind of pepper.

Place the dish in the preheated oven and bake for 10-12 minutes. Remove from the oven and leave to cool for 2-3 minutes before sprinkling with the chopped parsley.
