Banana chocolate birthday cake

When I was growing up, home-made mince pies was my favourite food but your kids will love these!

There is a very popular banana chocolate cake on that one of our readers, Wendy, submitted a few years ago. This cake is a variation on this, it makes a large cake that has a lovely light texture and is always moist.  It is a favourite with our family and friends and not just for birthdays.

200g butter, softened
1 cup (220g) brown sugar
1 cup (220g) white sugar
3 eggs
1 cup (250ml) plain yoghurt
1 teaspoon vanilla extract
1 cup (2-3 bananas) mashed banana
3 cups (435g) self-raising flour
1/2 cup (50g) cocoa (Dutch processed)
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups boiling water

Chocolate Icing:
3 cups (360g) icing sugar
2 tablespoon cocoa
2 teaspoons butter, melted
hot water for mixing


Preheat the oven to 180C. Line a 26cm or 28cm cake tin with baking paper.

Beat butter and sugars until pale and creamy. Add eggs, one at a time, beating well after each addition. Stir in yoghurt, vanilla and banana. Sift flour, cocoa and salt together and gently mix into cake mixture. Lastly add baking soda dissolved in boiling water. Pour batter into cake tin.

Bake for 1 hour or until a skewer inserted in the centre comes out clean. Cool for 10 minutes in the tin before turning out to cool completely on a wire rack.

To make the icing, combine icing sugar, cocoa, butter and enough hot water to make a spreadable consistency.

Ice cake when it is cold.
