Astar's tortilla pie recipe - 7 July

1 tbsp olive oil
500g mince beef
35g packet taco seasoning mix
420g can Mexican chilli beans - drained
8 flour tortillas
2 cups grated cheddar cheese
300g spicy tomato salsa
150 sour cream
1 avocado - diced
2 tomatoes chopped
Coriander for garnish
Preheat oven to 180degC.
Grease a 23cm pie dish.
Into a heavy based pan add oil, and then fry off mince until brown breaking up lumps as you go.
Add seasoning mix and beans and cook several minutes more.
Lay a tortilla in base of pie dish, then spread over 1/2 cup mince and bean mixture.
Sprinkle over a layering of cheese follow by around 1 tbsp salsa.
Continue layering ending with tortilla. Sprinkle with a little more cheese.
Finished assembly should look like a rounded dome.
Bake for around 15 minutes when cheese should be melts and the top lovely and brown.
Cool slightly, then cut into wedges and top with a little sour cream, diced avocado and tomatoes and garnish with chopped coriander.
