Quick and easy broccoli and cauliflower soup.
Chewy apple brownie slice
Beetroot and apple soup with horseradish.
Beetroot and Apple Soup with Horseradish
Time: 30 mins
10 medium beetroot
1 red onion - chopped
1 large potato chopped
1 large granny smith apple
1.5 litre chicken stock
2 tbsp balsamic vinegar
1 tube sour cream
2 tbsp prepared horseradish
1/4 tsp cayenne pepper
Skin beetroot, then cut 8 into small cubes, the remaining 2 into thin slices and set these aside.
Into a large heavy based pot, add chopped beetroot, onion, potato, apple and stock and bring to boil.
Simmer covered 30 minutes. Allow to cool before processing in a food processor until smooth.
While this is happening take a pan and heat a little olive oil. Add remaining sliced beetroot rings and pan fry until soft. Season with salt and pepper.
Return pureed beetroot back to pot, along with balsamic and seasoning and bring up to the simmer.
Stir in half a bottle of the sour cream.
To make horseradish cream
Into a small bowl combine well half the sour cream, horseradish and cayenne pepper.
To serve, pour pureed beetroots into deep bowls, top with pan fried beetroot slices and a dollop of horseradish cream.
Chewy Apple Brownie Slice
6 tbsp butter - melted
1/2 cup brown sugar
1/2 cup castor sugar
2 large eggs at room temperature
2 tsp vanilla
2 cups plain flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
4 grated apples - leave skins on
1/2 cup pecan nuts
Preset oven to 180 degrees celsius
Grease and line with baking paper a baking tin
Into a large bowl, combine butter, sugars, eggs, and vanilla and beat until smooth.
Into another bowl add dry ingredients along with apples.
Mix apple mixture into batter and stir gently until just blended.
Fold in nuts, then pour into baking tin and bake 30 to 35 minutes or until golden brown and a skewer inserted into middle comes out clean.
Cool serve as a slice or dessert topped with plain yoghurt.

Time: 30 mins
1 large onion
2 cloves garlic
Little olive oil
1 large head each of broccoli and cauliflower
1 or 2 chicken or beef stock cubes
Enough water to cover vegetables
Salt and pepper
Small smoked fish fillet
Finely chop onion and garlic.
Cut all vegetables into small florets and thinly slice stalks
Into a heavy based pot, saute until soft both onion and garlic.
Add thinly sliced stalks and cook several minutes.
Add remaining vegetables and cover with water.
Break in stock cube and bring to boil. Simmer until all vegetables are VERY soft.
Allow to cool before blending until smooth in food processor.
Return back to pot along with flaked smoked fish. Bring back up to heat.
Season and serve.
