Astar's recipe - Hearty winter soup and Corn bread - 2 May


Hearty winter soup

Shopping list -

Large pot - big wooden spoon
Packet Kings vegetable soup mix and about 9 cups water
Large piece of cheap cut meat (500g) cut into bite-sized pieces
Good handful each of potatoes, kumara, carrots, celery, pumpkin and parsley - chopped.
1 medium tin of corn (not creamed) - drained
A little oil
Salt and pepper for seasoning

Method -

Heat oil in pot, then brown meat quickly on both sides.
Add chopped vegetables and stir several minutes until they start to soften.
Add soup mix and stir.
Add water and bring to the boil.
Reduce heat and simmer 11/2 hours, stirring occasionally. Add corn in the last 10 minutes of cooking. 

Corn Bread - Serve with Hearty Winter Soup

Shopping list -

1 cup flour
1 tbsp sugar
4 tsp baking powder
1/2 tsp salt and pepper
1 cup cornmeal
4 tbsp melted butter
1 cup milk
2 eggs

Method -

Pre-heat oven to 200 - cooking time 30 minutes
Into a large bowl add flour, sugar, baking powder, salt, pepper and cornmeal.
Melt butter and add to milk and eggs. Mix well.
Add this mix to dry ingredients.
Mix quickly then pour into baking dish
When cooked cut into thick wedges, serve warm, buttered with soup.

Easy sponge topping for a fruit pie

Shopping list -

2 eggs - separated
1/2 cup flour
1/2 tsp baking powder
1/4 cup sugar
3 large cups of cooked or canned fruit

Method -

You will need to grease a baking dish.
Pre-set oven to 175degC - cooking time about 20 minutes.
Beat egg whites until stiff
Add sugar and beat
Add egg yolks and beat until mixed
Add sifted dry ingredients and mix with a metal spoon.
Spoon over fruit and bake 175degC for 20 minutes.
Serve warm with ice cream.
