Apple meringue cake

Makes:            1 x 30cm cake
Cooking time:  30 minutes

1/2 cup vegetable shortening
1 cup brown sugar
2 egg yolks
2 cups flour, sifted
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1 cup thick, unsweetened apple sauce


2 egg whites
1/2 cup brown sugar
1/2 cup nuts, chopped fine


Cream shortening and sugar. Add egg yolks and blend well.

Sift flour, baking soda, salt and spices well together. Add to creamed mixture alternately with the apple sauce.

Pour into a greased tin (20 x 30cm), lined with baking paper. Top with meringue.

To make the meringue, beat egg whites until stiff.  Gradually add sugar and beat until mixture peaks.  Spread over raw batter. Sprinkle with chopped nuts.

Bake in a moderate oven (180C) for about 30 minutes.
