Apple Crepes Recipe

Ingredients
1 cup of plain flour
2 eggs
One and half cups milk
Pinch salt & sugar
2 Tbsp of melted butter
Pinch of cinnamon

Method
Sift flour into bowl, add all other ingredients, whisk till smooth
Pass through sieve
Rest in fridge for approx 1 hour.
Core and slice one apple.
Heat non stick pan with a little butter
Add some apples colour slightly then pour thin layer of crepe batter over apples
When set turn once to colour and serve with a little whipped cream and chocolate fudge sauce.

Chocolate Fudge Sauce
Ingredients
6 Tbsp cream
4 Tbsp water
2 Heaped Tbsp castor sugar
80g chocolate
5 Tbsp water

Method
In a saucepan boil the 4 tbsp water and the sugar till lovely caramel colour
Add cream, stir add chocolate stir then add 5 tbsps water
Remove from heat.

Crab Apple Jelly

Method
Rinse and chop crab apples into quarters
10 cups of crab apples cover with water and bring to boil, and then simmer
Ten minutes.
Don't stir
Drain and keep the juice which should be about 5 cups
Then add 3 cups of white sugar
Boil till 110C degrees
Bottle as for preserves adding one sage leaf per jar.
