Annette King's Weetbix loaf - 20 October

Weetbix loaf

Time: 20 mins prep, 1 hr cooking 

4 Weetbix
50 grams butter 
1/2  tsp baking soda
3 tbsp golden syrup 
1/2  tsp mixed spice
1 cup mixed fruit
Half cup apricots (chopped)
Half cup crystallised ginger
1 cup self raising flour
1 egg
Half cup chopped nuts
1 cup boiled water

Break the Weetbix into a bowl and mix in the butter.

Add the baking soda, golden syrup and mixed spice, mixed fruit, apricots, ginger and add the boiled water and leave for 5 mins. Stir well.

Then add flour, egg, nuts and stir well

Line a loaf tin with baking paper. Flatten ingredients into tin.

Bake at 180C for one hour.
