A very moist and full flavoured muffin. The aroma while the muffins are cooking is just sensational.

Makes 24

2 oranges
2 large eggs
200 g melted butter
1 cup dates (roughly chopped)
400 g plain yoghurt (with a little lemon juice added)
3/4 cup sugar
3 cups flour
2 tsp soda
2 tsp baking powder
½tsp salt

Preheat the oven to 200 deg C.
Blend the whole oranges in the food processor - skin, seeds everything! Add eggs and melted butter (cooled slightly) and whirl the mixture all around, but don't over-process.
Place in a large bowl and add dates. Mix the yoghurt and sugar together in a jug or bowl. Sift the dry ingredients into another bowl.
Alternately add the yoghurt mixture and the dry ingredients and just blend, do not over-mix.
Place in greased muffin pans and bake 200 deg C for 15-20 minutes.

Note: These muffins keep well for up to three days. If your pantry is low on dates, you can use figs or raisins.
