Almond Milk Rice Pudding

Serves: 4
Preparation time: 5 minutes
Cooking time: 40 minutes

Break this down into small portions to eat with one hand while managing the new baby, great hot or cold.

2/3 cup medium-grain rice (I like the ceres medium grain New World Vic Park)
3 cups almond milk (Vitasoy please)
1/2 vanilla pod
3 tablespoons coconut sugar  (should have some from prior segment)
1 teaspoon butter, optional
1 apple for stewing

Place the rice, milk, vanilla seeds and a pinch of salt with 1 tablespoon of the coconut sugar into a saucepan.
Cover with a lid and simmer on a low heat for 25-30 minutes
Stir in remaining sugar and the butter.
Turn off the heat and cover with a lid.
Rest for 7-10 minutes before spooning into individual containers to freeze, chill or re-heat when needed.
Depending on the season and if you have time stew a little fruit to serve alongside, peel and core the apple, place in a saucepan with a sprinkle of sugar or honey, 1/2 cup boiling water and cover with a lid.  Simmer until soft.
