3 Colour Lunch Box

Servings: 2
Cooking Time: 15 minutes

Ingredients
Chicken
160g Chicken mince
2 Tsp sugar
1 Tbsp Soy Sauce
1 Tsp Ginger, chopped

Scramble Egg:
2 Egg
Salt (optional)
Oil

Capsicum
1/3 Capsicum, cut into julienne
2 Tsp sugar
1 Tbsp Soy sauce

Cooked rice

Method
To cook chicken mince, place all the ingredients in a small pot over high heat and bring to boil.
Reduce the heat to low and simmer for 5-10 minutes. Remove from the heat and set aside.
To cook the egg, break 2 eggs in a blow and season with a pinch of salt and mix well.
Heat a medium size pan over a medium-high heat.
Add oil and the egg mixture in a pan.
As soon as the egg starts to cook use a wooden spoon and move the mixture around to break the egg up into small lumps.
Remove the pan from the heat and set aside.
To cook the capsicum, add capsicum, sugar and soy sauce in a small pot over high heat and bring to boil.
Reduce the heat to low and simmer for 5 minutes.
Remove from the heat and set aside.

To serve, place a cooked rice at the bottom of a lunch box / bowl, and add cooked chicken, egg and
capsicum on top of the rice.
