Irish potato bread

Potato farls (Irish potato bread)
2 cups mashed spud (about 4 medium sized potatoes)
3/4 cup flour
30g butter (melted)
Salt and pepper to season
Pour the butter and seasoning into the mashed potato and mix
Add the flour and combine - dont overdo it
Knead VERY lightly and divide into two equal parts
Roll each out onto a floured bench top using a floured roller. The result should be a circle about the size of a dinner plate and (say) about 7mm thick.
Pan fry in a medium-hot skillet or frypan for about 2-3 mins each side.
